During the dog days of summer, few of us want to cook. Instead, we, and most definitely I, look for easy, refreshing recipes that don’t skimp on flavor and texture. As luck would have it, I found a perfect dessert, with its main ingredient, fresh peaches, right in our backyard. Our beautiful peach tree offered an abundance of juicy, fuzzy-skinned peaches this year and my daily diet includes one or more. When I found the recipe for Peach Souffle, I was elated since I love a touch of sweet after dinner and I needed to find more ways to utilize the goodness of the peaches besides giving them to friends. As you may expect, I found a brilliant wine for pairing, too – Frank Family Vineyards 2016 Blanc de Blancs ($60).

2016 Blanc de Blancs is 100% Chardonnay sourced exclusively from Frank Family’s Lewis Vineyard in Carneros. Maritime influences from the Pacific Ocean and San Pablo Bay create cool temperatures, fog and wind that make the site well suited for cultivating cool climate varieties. Lewis Vineyard is of shallow and dense clay loam; yields are low and grapes exude balanced acidity and character.
Such a glorious wine, I found elegant aromas of juicy green apple, lemon zest, and a touch of ginger. Dancing bubbles in the glass punctuated notes of honey, nuts, and vibrant acidity. The slightly savory, zesty finish lingered. Now for the dessert! Slightly sweet, the Peach Souffle boasted subtle notes of ginger and classic peach tastes. Its creamy texture complemented that of the Blanc de Blancs which underwent partial malolactic fermentation to achieve its richness and smooth creaminess. This pairing is summer dessert at its best!
